36 years shaping Italian cuisine

Chef Hania's path to the kitchen started somewhere else entirely. She arrived in Florence in 1990 to study fashion design at Accademia Italiana Moda — and found her real calling in the kitchen instead, turning a lifelong love of art and craft toward food.

She went on to train at Accademia Italiana Chef, and today her cooking carries both halves of her story: the Palestinian roots she grew up with, and the Italian tradition she spent a career mastering.

At DRIFT, that journey becomes dinner — one night where two cuisines meet on the same plate.

Jerusalem

Home. The flavors she grew up with — warmth, spice, and family recipes passed down long before she ever picked up a chef's knife.

Florence

Craft. Thirty-six years of technique and discipline in Italian kitchens, learned and refined one dish at a time.
